How to Make Classic Strawberry Jam at Home

<h3> Ingredients:</h3>


• 2 pounds (about 900 grams) fresh strawberries


• 1 ½ cups (300 grams) granulated sugar


• 2 tablespoons freshly squeezed lemon juice


• 1 packet (1.75 ounces or 49 grams) fruit pectin (such as Sure-Jell)


• ¼ cup water

<b> 1.Prepare the Strawberries:</b>


Wash and hull the strawberries, removing the green tops and any leaves.


Slice or chop the strawberries into small pieces, depending on your texture preference.


<b> 2.Cook the Strawberries:</b>


In a large saucepan, combine the strawberries and water. Cook over medium heat, stirring now and then, until the strawberries break down and release their juices. This should take about 10 minutes.


<b> 3.Add Pectin:</b>


Gradually stir in the fruit pectin, ensuring it is well-distributed throughout the mixture. Cook for 2 more minutes, stirring often.


<b> 4.Incorporate Sugar:</b>


Add the granulated sugar and lemon juice to the saucepan. Stir constantly until the sugar has completely dissolved.


<b> 5.Boil the Mixture:</b>


Increase the heat to high and bring the mixture to a rolling boil that cannot be stirred down. Boil for 1-2 minutes, or until the jam reaches 220°F (104°C) on a candy thermometer.


<b> 6.Test the Jam:</b>


To check if the jam has been set, place a small spoonful of the hot jam on a cold plate and let it cool for a minute. Run your finger through it; if it wrinkles and keeps its shape, it’s ready. If not, boil for an additional minute and test again.


<b> 7.Prepare Jars:</b>


While the jam is boiling, sterilize your jars and lids by boiling them in water for 10 minutes.


<b> 8.Fill and Seal:</b>


Ladle the hot jam into the sterilized jars, leaving about ¼ inch of headspace at the top. Wipe the rims of the jars with a clean, damp cloth to remove any residue. Place the lids on top and screw on the metal bands until they are fingertip-tight.


<b> 9.Process Jars:</b>


Process the jars in a boiling water bath for 5 minutes to ensure they are sealed properly. Let the jars cool completely on a clean towel or rack.
