1. Heat the milk in a pan over medium heat.


2. Whisk the sugar and cocoa powder together, then add the egg yolks until smooth.


3. Slowly incorporate the hot milk into the egg mixture while stirring. Return the mix to the stove and cook on low heat until it thickens.


4. Stir in the melted dark chocolate and cool the mixture. Follow the same freezing and stirring method as in the vanilla gelato recipe.
