<b>If you've got your hands on some rambutan! Here's how to keep it fresh: </b>


Pop it in the fridge, and it should stay good for about two weeks, though this can vary depending on when it was harvested.


If you prefer it at room temperature, you can leave it out on the counter for 1-2 days.


And hey, if you've got more than you can eat right away, you can freeze it for up to six months with the outer shell on.


Just remember, while frozen rambutan is still tasty, it's best enjoyed fresh!


<b>Spicy Rambutan Curry Delight</b>


<b>Ingredients:</b>


• 20 Rambutan fruit


• 1 tbsp chopped Ginger & Garlic


• 2 Green Chilies


• 3 Chilli Flakes


• 1/2 tsp Turmeric Powder


• 1 tsp Fenugreek Powder


• 1 tsp Hing Powder


• 1 tsp Cumin Powder


• Salt, to taste


• 1 tbsp Curry Leaves


• 2 tbsp Gingelly Oil or Coconut Oil


• 2 1/2 tbsp Kashmiri Chilli Powder


• 1 cup Water


• 1 tsp Jaggery Powder


• 1 tsp Mustard Seeds


<b>Cooking Instructions</b>


1. Peel the hairy skin off the Rambutan fruit and rinse the white fruit with water.


2. Heat oil in a pan, then add mustard seeds. Once they start to splutter, add chilly flakes, chopped ginger, garlic, green chilies (cut into pieces), and curry leaves. Sauté on medium heat for about 2 minutes.


3. Next, add Kashmiri chili powder and turmeric powder. Stir well, then pour in water and add salt to taste. Let it simmer until the water is absorbed.


4. Then, add cumin powder, fenugreek powder, and hing powder. Stir for a while before adding the Rambutan fruit.


5. Mix everything gently and let it cook on low heat for 2 minutes. Sprinkle jaggery powder and mix again. Remove from heat.


6. Transfer the curry to a serving bowl and enjoy it with rice and other dishes.


7. Once it cools down, store any leftovers in a steel or glass container.
