- 30g unsalted butter, melted


- 60g (1/3 cup, lightly packed) brown sugar


- 300g fresh pineapple, peeled and sliced into 5mm-thick slices


- 3 eggs, separated


- 215g (1 cup) caster sugar


- 1 tsp vanilla essence


- 150g (1 cup) plain flours


- 1 tsp baking powder


- 80ml (1/3 cup) pineapple juice


- Whipped cream, for serving


- Fresh strawberries, washed and hulled, for serving


<h3>Method</h3>


1. Preheat your oven to 180°C (350°F). Grease and line a 20cm (8-inch) round cake tin with baking paper.


2. In a small bowl, combine the melted butter and brown sugar. Spread this mixture evenly over the base of the prepared cake tin.


3. Arrange the pineapple slices in a single layer over the butter and sugar mixture.


4. In a large bowl, beat the egg yolks and caster sugar until pale and creamy. Add the vanilla essence and mix well.


5. Sift the flour and baking powder over the egg yolk mixture. Fold gently to combine.


6. Stir in the pineapple juice until the batter is smooth.


7. In a separate clean bowl, beat the egg whites until stiff peaks form.


8. Gently fold the beaten egg whites into the cake batter until just combined.


9. Carefully spoon the batter over the pineapple slices in the cake tin, spreading it evenly.


10. Bake in the preheated oven for 40-45 minutes or until a skewer inserted into the center comes out clean.


11. Remove the cake from the oven and allow it to cool in the tin for 10 minutes.


12. Turn the cake out onto a serving plate while it's still warm to ensure the pineapple topping stays intact.
